Preparation and storage of brewed coffee

1. Some tips for using fractional packs:
It’s very important to ensure that coffee is not open and stacked in the filters for use through-out the day. Coffee quality will deteriorate with exposure to air and moisture. Also, to ensure that proper flavour characteristics are developed, we recommend a fractional pack size ranging from 2.75 to 3.25 ounces (78 to 92 grams) for a 64 ounce (1.9 litres) pot of coffee, or.25 to .32 ounces (7 to 9 grams) for a 6 ounce cup of coffee. Actual coffee weights should be adjusted to match your customers’ taste preferences.

2. Brewing temperature and time:
There are different models of commercial brewing equipment available, including pour-overs, automatics and urns. Each model is designed to meet different customer requirements including hourly and batch brew capacity, space, power and plumbing availability. The units must meet the following brewing criteria: brew temperature of 200° F (75°C) (+ or -5° F/2°C), brew times of 3 minutes,20seconds to 4 minutes,20 seconds per 64 ounce (1.9 litres) and 5 minutes to 8 minutes for brew volumes of 128 ounce(3.8) litres or more. It’s very important that the correct, high quality paper filter is used for each model as they will affect the brew time and extraction, and thereby influence the quality of the beverage. Brewing temperature can be checked and verified by measuring temperature of the flow of coffee at the bottom of the funnel, allowing for 8°-12°F (3.6 to 5.4°C) temperature drop from 200°F (75°C).

3. Espresso Machines:
Proper extraction time for espresso machines is 18-20 seconds for 6-8 gram dose of coffee producing 1.5 ounces of beverage.

4. Machine Cleanliness
Regular cleaning of coffee machines is critical in order to prevent build-up of coffee oils and lime scale. Ideally, machine should be cleaned after each use. At a minimum, machines should be cleaned once per day. The key tasks in properly cleaning your equipment are:

  • Remove spray head; check if all holes are open. If not, use a pin or wire to unclog. Wipe area around spray head with clean, damp cloth to remove coffee oils.
  • Ensure funnel cleanliness.
  • Use clean bowls or decanters to brew coffee.
  • Wipe heating plate as needed to keep free of coffee oils, spilled brew and other impurities. Do not use soap or detergents to clean machines, as residuals from these agents will remain in machine. For grinding equipment is also important to ensure cleanliness, especially if using the machine for different varieties. Different grinding equipment should be used for flavoured coffee.
